Recipes: Healthy Blueberry Muffins

Ingredients:

1 cup of greek yogurt

1/4 cup of milk

1 egg

1 teaspoon of vanilla extract

1/3 cup of honey *

1 cup of oats

3/4 cups of all-purpose flour (you can use wholemeal flour, gluten free flour or regular flour)

1 teaspoon of baking powder

1/2 teaspoon of baking soda

1/4 teaspoon of cinnamon

1/4 teaspoon of salt

1 cup of blueberries

4 tablespoons of melted coconut oil (or any type of vegetable oil you have at home)

*The amount of honey can vary according to your preferences. If you prefer a sweeter muffin, we recommend that you put in a greater amount of honey.

 

Instructions:

Step 1

Preheat the oven to 375 degrees F and grease a muffin tin.

Step 2

In a bowl, mix all of the dry ingredients (oats, flour, baking powder, baking soda, cinnamon, salt).

Step 3

In another bowl, mix all of the wet ingredients (yogurt, milk, egg, vanilla, honey, coconut oil)

Step 4

Pour the wet ingredient mixture into the bowl with the dry ingredients. Then, add the blueberries to the mixture.

Step 5

Pour the mixture into the muffin tin and bake it for about 15-20 minutes.

Step 6

Once they are ready, leave the muffins cooling down for a few minutes before you eat them. You can enjoy them as they are, or drizzle some honey on top of them.
