We got this recipe from a book we highly recommend because it is full of mouthwatering, healthy recipes: True Food: Seasonal, Sustainable, Simple, Pure del Dr. Andrew Weil MD, Sam Fox y Michael Stebner.
Ingredients:
- 2 cups red quinoa
- 2 cups of prepared flour
- ¼ cup sugar
- 2 tablespoons plus 11/2 teaspoon of baking powder
- Pinch of salt
- 1 teaspoon ground cinnamon
- 2 cups whole milk
- 4 large eggs
- 1 teaspoon vanilla
- ½ teaspoon canola oil
- 1 cup blueberries
- 1 cup nonfat vanilla Greek-style yogurt
- Maple syrup for serving
Preparation:
1. Boil 4 cups water and 1 teaspoon salt in a saucepan. Add the quinoa and stir. Reduce heat to low and cover with the skillet lid until quinoa is dry and tender about 20 minutes. Cool.
2. Combine the flour, sugar, baking powder, salt, and cinnamon in a large bowl. Mix well to combine. In another bowl, combine milk, eggs, vanilla, and canola oil and mix well to combine. Add all the dry ingredients to the wet ingredients and mix with a spatula. Mix in the cooked quinoa, being careful not to over-mix. Let the dough rest for at least one hour.
3. Lightly grease a frying pan with the canola oil. Pour 1/3 of the batter into the hot pan. Top with 8 to 10 blueberries. Flip and cook on the other side until lightly browned when bubbles form in the batter. Do the same with the remaining batter, placing the blueberries on top each time. Serve with yogurt and maple syrup on the side.
