Healthy Breakfast! Granola and Greek Yogurt Ice Cream Cupcakes

These iced cupcakes with granola and Greek yogurt are ideal for spring or summer, as they are quite fresh. If you are one of those people who eat ice cream in winter, then in your case, they will be eating it for all seasons!

How to prepare this tasty and healthy breakfast?

Here's what's in it and how to prepare it in six simple steps. You'll see how easy it is to make!

Ingredients:

  • 1 cup granola
  • Two tablespoons peanut butter (or your favorite nut butter)
  • 2 tablespoons honey
  • 1 1/4 cups Greek yogurt
  • Berries (raspberries, blackberries, blackberries, strawberries)
  • Extra granola to put as a topping

Preparation:

Step 1

Mix the peanut butter and honey until smooth. If necessary, heat them in the microwave or on a stove to blend them well.

Step 2

Put the honey and peanut butter mixture in a bowl and mix it with the granola.

Step 3

Place about 8 cupcake paper liners in a cupcake tin and pour equal amounts of the mixture into each one. Press the mixture down once you have done this to create an even layer.

Step 4

Top the granola layers with Greek yogurt. Divide it evenly into each pirotin. If your yogurt isn't sweet, you can add a little honey before you do this step.

Step 5

Finally, decorate them with toppings of your choice. You can use berries, more granola, cocoa nibs, chocolate, or even mint leaves. Once you have done this, put them in the freezer for at least two hours.

Step 6

Preferably, take them out of the freezer half an hour before you eat them to soften them up so you can enjoy them more. Hopefully, you like them as much as we do!
